Cakes, Friends, and Weddings.


6 Years ago a friend of mine asked me if I would consider doing their wedding cake for them. With confidence I said yes, thinking that because I had just recently finished culinary school I would totally be able to do it by myself... I mean how hard is it really to bake a cake and decorate it? Well my confidence was quickly crushed beneath the weight of flowers, vanilla cake, strawberry compote, and fondant. I was in over my head, which is why I was surprised that it ended up looking like this...(see image to the right) or, maybe they had a really great photographer?

Either way, I've had a lot of people compliment me on the cake and have asked me if I would consider doing their wedding cake. I've turned them all down because, to be frank, I honestly don't like it and the amount of work that goes into just one cake is ridiculous. When my good friends Jefferson and Lauren saw the kind of work I was capable of doing and asked me to do their wedding cake for them. I was honoured and of course said yes. How could I not?

I've been friends with Jefferson for a very long time. We've been through a lot and our relationship has changed and grown in ways that I don't think he or I could ever predicted. The best way I can describe the kind of relationship I have with him comes from an old proverb "A friend loves at all times, and a brother is born for a time of adversity." Like I said, we've been through a lot and have seen the very best and worst of each other and some how through it all have remained very good friends. I love this guy like a brother, even if he is obnoxious. :)

I needed help with this cake so I enlisted the best cake decorator I know, my Mom. She has a gift that I can at best only imitate. Without her help, this thing wouldn't have happened. Between the two of us it took over 12 hours to finish and was difficult to do. Putting black fondant on white wasn't easy because it would stain the white fondant, leaving black streaks. We tried our best to clean up our mistakes but we couldn't get them all. Thankfully the hall was dark enough to cover those mishaps! It was 5 tiers tall and was finished with gum paste coral roses. We are both really proud of how it turned out. Take a look and let us know what you think of it. 

The ceremony and reception was wonderful and I was so happy to celebrate their marriage with them and the new lives they are building together. I wish you guys the best in years to come and hope they are filled with joy, laughter, and love... Just like how you guys look in this picture.
