I’ve mentioned it before that outside of this blog I work with foster children. When most people hear that, they typically express some kind of compassionate admiration towards what I do. Which, I’m not going to lie, I appreciate because sometimes my job is hard. Like, for example, when you are unsuccessfully dodging a bite from a a little autistic boy(That’s only happened once in 7 years).

Crispy Cider Pork Belly Lettuce Wraps.

If you’ve been following me for some time you may not realize that I like to be healthy, like really healthy. I work out almost every day and eat healthy (most of the time). This might come as a surprise because most of what I create and post here isn’t necessarily about living a healthy lifestyle. The reason? Maple Whiskey and Beet Salmon Gravlax

I recently wrote about my sister’s wedding I catered in Norway. (You can read about that HERE) Ever since then I’ve been asked for the recipes. I haven’t gotten back to them because… ok, confession time… I never wrote recipes down when I cooked back then. There’s hundred’s of dishes lost to time because of my negligence. The folly of youth!

Winter Squash Risotto

Winter Squash Risotto

Risotto is one of my favourite dishes to make AND eat. If it’s on a restaurants menu I can guarantee that I will order it. Ever since I was first introduced to it and learned how to make it in chef school I've been making variations of it. One of the things I love about risotto is it’s versatility. You can literally do anything, almost anyway, with it, even dessert.
