Lime Pickled Daikon and Carrots

1 Medium Carrot, Juilenned 
1 Large Daikon, Juilenned 
1 Teaspoon Salt 
2 Teaspoon Sugar
1 Cup White Vinegar 
1/4 Cup Rice Vinegar 
1/4 Cup Sugar 
1 Lime Sliced

In a medium sized mixing bowl add in carrots, daikon, salt, and 2 teaspoon of sugar and mix together for 3-5 min. You'll begin to see liquid pooling at the bottom of the bowl this is a good thing as this will keep the vegetables crisp. Rinse and strain the carrots and Daikon. 

In the same bowl you just used mix together sugar and vinegars until the sugar is completely dissolved. Place the lime slices into sugar vinegar mixture as well as the carrots and daikon. Let them pickle for at least an hour or longer.
