I recently found a local organic beef farmer in the area where I live. Since then I've been obsessed with using his products. The meat is more flavourful and less fatty, which is a win, win when it comes to beef. The last time I was there I picked up some ground beef to try and thought it would make an excellent burger and I was right! The meat was lean, juicy, and full of flavour, just what I was expecting and hoping for. I'm glad it turned out the way it did because I'm submitting this to the Cono Sur food bloggers competition where I could have the opportunity to travel to Paris, France. Organic Beef Burger with Maple Caramelized Onions, Brie, and Horseradish Aioli
1 lb. Organic Ground Beef
1 Medium Shallot Finely Chopped
1 Jalapeno finely chopped
6 Slices of Brie Cheese
Salt and Pepper Too Taste
Mix all ingredients accept the brie cheese together in a medium sized mixing bowl until well combined. Let rest in fridge for 20-30min. Preheat grill on high heat. While the grill is heating portion the meat into three equal portions and form into patties. Once the grill is to temperature place patties on the grill and turn down heat to medium. Cook until small water droplets form on top and flip, cook until your desired doneness. If you use really fresh meat you can eat a burger to medium doneness, but if you are concerned about food poisoning then cook until it is well done... but PLEASE don't cook it until its dry! No body likes a dry burger! Once you are done cooking top with brie cheese and begin building the rest of the burger. Top with maple caramelized onions, horseradish aioli, spinach and serve on a toasted onion bun. Enjoy!
