Sriracha Peanut Vinaigrette

This summer my family and I decided that we would increase our vegetable garden and try to grow the majority of our vegetables. It is the beginning of June and we are already enjoying the fruits of our labour. We planted a variety of lettuce, kale, and spinach, and they are ready to harvest! This is great for me as I love to make my own salad dressings. The possiblites are endless, if you know proper oil to acid ratio. 

This is where you get into personal preference, there isn't a hard and fast rule regarding the best ratio to oil and acid, but the most common rations are 2-1, 3-1, or 4-1. More oil means the dressing will feel more smooth on the tongue. The more acid (vinegar, lemon juice, lime juice) and it will be obviously more acidic. Once you figured out what your preference is, the world is your oyster. Or at least your vingerette will taste good on oysters... Give it a try! 

 

Sriracha Peanut Vinaigrette 

Sriracha Peanut Vinaigrette

Ingredients:
1 Tablespoon Toasted Sesame Oil 
3 Tablespoons Grapeseed Oil 
1/2 limed Zested 
Juice of whole lime 
1 garlic Clove, Minced 
1 teaspoon Minced Ginger 
1 tablespoon peasnut butter 
1 teaspoon rice vinegar 
1 1/2 tablespoon brown sugar 
2 tablespoons soy sauce 
salt to taste

Directions:
Combine all ingredients and mix well. Taste and season with salt if needed.
