Apple Crisp, Pancakes, Maple Syrup

Apple season is in full swing. It's time to get pick your own and make delicious apple things. Too be honest I'm tired of pumpkin spice everything and I long for a fall spice reformation. It's like someone at StarBucks head quarters saw 1 leaf change its colour, got on twitter and then the whole North America population went crazy and make them pumpkin-stupid. Don't get me wrong, I love Pumpkin Spice stuff, especially Pumpkin Pie. It just happens to be one of my favourite desserts and l'm known to be sucker for a pumpkin pie blizzard from Dairy Queen. BUT do we really need every speciality drink/ice cream/yogurt/doughnut/cookie/bread/etc to be pumpkin spiced? Doesn't it make pumpkin not special anymore? Listen, I'm just thankful that McDonald's hasn't come out with a "freshly" baked pumpkin pie. (Although, that isn't such a bad idea) I may even be a hypocrite for ranting like this because I posted last year about a Pumpkin Pie Pancake recipe... I even plan on making more pumpkin inspired things this fall... But, seriously, we need some more variety in our pumpkin crazed Fall... well at least I do, which is why I recommend we start a new kind of hysteria, or maybe its more of a return to...  the humble apple. I propose that next year everyone joins in on the Apple Spiced Revolution! It wouldn't be so bad to to change things up a bit would it?

Apple Crisp Pancakes

Ingredients for Pancake Batter: 
2 Cups Flour
2 Tablespoons Sugar
1 Teaspoon Salt
1 Teaspoon Baking Soda
2 Eggs
1 1/2 Cups Milk
1 Tablespoon Vanilla Extract 

Ingredients for Apple Mixture:
2 Apples Small Dice
3 Tablespoons Brown Sugar
1/2 Teaspoon of AllSpice
1/2 Teaspoon Clove
1/2 Teaspoon Nutmeg
1 1/2 Tablespoon Cinnamon

Ingredients for Crisp Mixture
3/4 Cups Rolled Oats
1 Tablespoon Cinnamon
3 Table Spoons Melted Butter
1 Table Spoon Maple Syrup
2 Table Spoons Brown Sugar


Directions:
In a large mixing bowl mix together all dry ingredients and form a crater in the middle. Pour milk, eggs and vanilla extract into the centre of the well and mix the wet ingredients together then slowly begin to mix in flour. Mix until the batter is mostly smooth but still has some lumps. You don't want over mix because then you'll have rubbery pancakes, and nobody likes that. 

In a smal mixing bowl mix together all ingredient for the apple mixture. In another small mixing bowl mix together all the ingredients for the crisp as well. 

Preheat a large frying pan on medium heat. Just before you are ready to start cooking place 1 tablespoon of butter in pan making sure to coat the bottom of the pan evenly.  Using a 2 oz. ladle, ladle batter into frying pan and cook until you begin to see bubbles form. Once this occurs place apples and crisp mixture on top of the pancake and flip. Cook on the other side until batter is fully cooked through. Be careful with your heat as there is a lot of sugar in the crisp and apple mixtures and will burn easily. You'll have to play with the heat a little to make sure that doesn't happen.
