Vegetarian Burritos


             When I was in high school I had the opportunity to go to Mexico. This is where I was first introduced to authentic Mexican cuisine (sorry taco bell, I love ya, but...) and I have to say that I HATED it. I don't think I ate anything except for beans and rice the whole trip. It didn't matter what I tried I couldn't seem to get past how spicy everything was and how "fresh" everything tasted. Luckily in the last few years I have grown to love spicy food and love that "fresh" flavour. That "fresh" flavour that I couldn't seem to get past was in fact the most common spice/herb used in the world. cilantro. This white boy and his developing taste buds hated that stuff because it tasted like perfume to me. It reminded me of my great aunt more than something that I wanted to consume. It's what kept me away from Mexican food for a long time but THANKFULLY my taste buds grew and I began using it in the most sparingly ways possible. I'm happy to report that in the last year Mexican food has quickly become one of my favourite cuisines and I've begun to experiment a little more with it.  

There are a lot of components to this dish, I'm sorry for how text heavy this post is, I will try and take more pictures of the process next time. In the meantime, make these things and enjoy!

Vegetarian Burritos

Guacamole Recipe 
Ingredients:
3 Avocados
1/4 Red Onion, Small Diced
1/4 Red Pepper, Small Diced
1/4 Yellow Pepper, Small Diced
1/4 Orange Pepper, Small Diced
1 Roma Tomato, Small Diced
3 Cloves of Garlic, Minced
1 1/2 Lime, Juiced
Salt and Pepper to taste

Directions: 
In a mixing bowl and all chopped veggies, lime juice, and garlic. Remove the core and skin from the avocado's and add to the mixing bowl. Smash the avocados and mix well with other ingredients. Season with salt and pepper to your taste. 

Refried Beans Recipe 
Ingredients: 
2 Cans of Black Beans
1 Onion, Small Diced
1 Jalapeno Pepper, Minced
1 TableSpoon Cumin
1 TableSpoon Chili Pepper
4 Cloves of garlic, Minced
Salt and Pepper to Taste

Directions:
Heat a large frying pan to high heat. Once the pan is to temperature add in onion and garlic and sauté until golden brown then add in the 2 cans of black bean, liquid included. Add in jalapeño, cumin, and chili powder. Stir and bring mixture to a simmer, simmer for 5 min. Season with salt and pepper and then with a potato masher, mash beans. Taste and season with salt and pepper again until it is properly seasoned. If the mixture is too watery keep on heat until you achieve your desired texture.   

Corn and Black Bean Salsa Recipe
Ingredients:
1 Can Black Beans
3/4 bag of frozen corn
1/2 Red Onion, Small Diced
2 Cloves of Garlic, Minced
1 1/2 Limes, Juiced
2 Tablespoon of Freshly chopped Cilantro
Salt and Pepper to taste

Directions: 
Add all ingredients into mixing bowl and stir. Taste and season until you achieve the proper amount of seasoning. 

Sweet Potatoes
Ingredients: 
3 Sweet Potatoes Large Diced
Salt and Pepper to Taste 

Directions:
Peel and cube sweet potatoes and place into a pot. Add water and salt and bring to a simmer, cook until tender. Strain sweet potatoes and let cool.

Pepper and Onion Medley
Ingredients: 
3/4 Red Pepper, Julienned
3/4 Yellow Pepper, Julienned
3/4 Green Pepper, Juilienned
3/4 Orange Pepper, Juilienned
1 Onion, Julienned
1 Tablespoon cooking oil
2 Cloves of Garlic, Minced
Salt and Pepper to taste

Directions:
On high heat, heat a large frying pan. Add 1 tablespoon of cooking oil. Immediately add onion. Cook until the outer edges of the onion are translucent but the centres have not been cooked through (sweat). Add in the peppers, garlic, and salt and pepper and cook until peppers are tender. Taste and season. 

Burrito Factory! 
Assemble the burritos and wrap them up. On top of the above listed items I put sour cream, shredded cheddar cheese, and freshly chopped cilantro in mine, because, why not? Once I had finished making and wrapping all 8 (I was cooking for my sisters family) I took mine to the grill to help seal everything together and to toast up the tortilla. This not only adds a really nice look to them but I like the texture it gives.
