Pina Colada Rice Pudding

Because who doesn't love Pina Colada everything? 

This winter had been long and I needed something that reminded me of the summer sun, the Bahamas, and something good. 

Here's the recipe. Enjoy responsibly.

Pina Colada Rice Pudding

Pina Colada Rice Pudding

Ingredients: 
1 1/2 Cups Water
3/4 Cups White Rice
1 Can Coconut Milk
1 Cup Milk
1 Teaspoon Fresh Lime Zest
1/2 of a Lime Juiced
2/3 Cup Coconut Sugar
1 Egg Beaten
3/4 Fresh Pineapple Small Diced
1/2 Teaspoon Vanilla Extract
1/4 Teaspoon Salt  
Toasted Coconut for garnish. 

Directions: 
In a medium saucepan, bring 1 1/2 cups of water to a boil. Add rice and stir. Reduce heat, cover, and simmer for 20 min or until water is absorbed. Add in coconut milk and stir, cook until really creamy. Add in coconut sugar, chopped pineapple, lime zest and juice and stir. Beat together the egg and 1 cup of milk together and slowly adding it to the rice stirring constantly. Cook for another 2 min. Remove from heat and add the vanilla extract. Garnish with fresh pinapple slices and toasted coconut.
