Banana Lime Bread

On Thursday Night one of my friends who I haven't seen in a while came over. As we were catching up I mentioned that I started a food blog and that I was in the process of developing some recipes to try out and to post on here. Luckily for me he was hungry and was willing to try this one. I'm pretty excited about this one because I have always loved banana bread; what says home like a fresh baked banana bread, right? Further its my first post for the food blog, please let me know what you think of it! 

One last thing I added the zest of a whole lime into the batter. If you want less lime flavour then play around with the amount, you could add half a lime zest if you think it might be too much.

Banana Lime Bread

Ingredients:
3 ripe banana's
1/3 cup coconut oil
1 cup sugar
1 egg beaten
1 teaspoon vanilla
1 teaspoon baking soda
1 1/2 cups all purpose flour
pinch of salt
zest of 1 lime 

Directions: 
Preheat oven to 350F
In a large mixing bowl mash the three banana's. Mix in the vanilla, melted coconut oil, and egg until all ingredients are well combined. Add the lime zest and stir. Sift together the flour, baking soda, sugar and salt into the same mixing bowl as your wet ingredients. Stir wet and dry ingredients together. Pour batter into oiled bread pan and bake for 40 min or until it is cooked through. Remove loaf from pan and set on a cooling rack to cool.
Once cooled, slice and serve, and enjoy!
